{"id":2217,"date":"2018-05-08T05:59:01","date_gmt":"2018-05-08T10:59:01","guid":{"rendered":"http:\/\/www.ruralroute2.com\/?p=2217"},"modified":"2020-12-22T13:33:11","modified_gmt":"2020-12-22T19:33:11","slug":"royal-rhubarb-pie","status":"publish","type":"post","link":"https:\/\/www.ruralroute2.com\/index.php\/2018\/05\/08\/royal-rhubarb-pie\/","title":{"rendered":"Royal Rhubarb Pie Recipe"},"content":{"rendered":"<p>Now that spring has arrived and my rhubarb is starting to come up in the garden, it&#8217;s time to think about making rhubarb pie.<\/p>\n<h2>Pie Filling:<\/h2>\n<ul>\n<li>2 tablespoons water<\/li>\n<li>4 cups rhubarb (cut up)<\/li>\n<li>2 cups sugar<\/li>\n<li>3 tablespoons cornstarch<\/li>\n<li>a pinch of salt<\/li>\n<li>1\/2 cup milk (cream, or Half &amp; Half; I have also used a 1\/2 cup of frozen vanilla yougert &#8220;ice cream&#8221;)<\/li>\n<\/ul>\n<p>Note: If you&#8217;re using the &#8216;old-fashioned&#8217; rhubarb with the greenish stalks, add several drops of food coloring. If you&#8217;re using the Canadian Red rhubarb, there&#8217;s no need for food coloring.<\/p>\n<p>Make pie crust (see below) and bake the bottom shell at 350 degrees for 15 minutes.<\/p>\n<p>While the pie shell is baking, put rhubarb, 1 3\/4 cups sugar and 2 tablespoons of water into a saucepan and cook over medium heat for 10 minutes, stirring constantly. Remove from burner.<\/p>\n<p>Mix 1\/4 cup sugar with 1\/4 cup cornstarch and stir into the hot rhubarb mixture. Add milk (cream or Half &amp; Half). Cook until thick.<\/p>\n<p>Pour filling into the baked pie shell. Add crumble crust. Bake at 350 degrees for 20 minutes until crust is lightly browned. Allow to cool thoroughly before cutting.<\/p>\n<p>For an added treat, serve with whipped cream or vanilla ice cream.<\/p>\n<h2>Pie Crust:<\/h2>\n<ul>\n<li>3 cups flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>2 teaspoons sugar<\/li>\n<li>2\/3 cup cooking oil (I like to use Canola oil)<\/li>\n<li>1\/3 cup water or milk<\/li>\n<\/ul>\n<p>Measure all ingredients into a mixing bowl and stir with a fork.<\/p>\n<p>Put half of the mixture into a 10-inch pie plate and pat down with the back of a spoon (or use your fingers) to form the pie crust.<\/p>\n<p>Bake at 350 degrees for 15 minutes.<\/p>\n<p>Mix 1\/4 cup of brown sugar with the remaining pie crust and sprinkle on top of pie to form a &#8220;crumble crust.&#8221; (Makes a generous crumble crust).<\/p>\n<p>Bake in a 350 degree oven for 20 minutes or until the crumble crust is slightly browned.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Now that spring has arrived and my rhubarb is starting to come up in the garden, it&#8217;s time to think about making rhubarb pie.
